HONORING TRADITIONAL FOODS

In this workshop, our cultural approach to cooking will allow you to explore Mallorca’s finest terroir, typical dishes and culinary traditions following family recipes and the island’s food calendar: from key seasonal ingredients to iconic products, all paired with organic wines and a sustainable food ethos.  

We collaborate with small producers & artisans to bridge your culinary experience with the most genuine artisanal food production of Mallorca. You will not only enjoy the taste of their passionate and hard work but also have the opportunity to take with you the ingredients and materials used during the workshop for you to replicate the recipes and bring home the authentic taste of Mallorca.

We offer this workshop in two versions, a Morning activity that includes the Market visit and an evening experience with an aperitivo prior to the workshop (because the market is closed in the evenings).

morningS THE MARKET visit

Located in the center of Palma, only 10 minutes away from my atelier, Mercado del Olivar is the largest typical market in the city. This stroll will allow you to delve in its vibran Mediterranean atmosphere. We will go through its fruit, fish and other delicacies stall, meet the vendors and source some of the ingredients that we need for our workshop. Once in my atelier, we will start a hands-on cooking workshop to prepare a complete Mallorcan seasonal menu together. Including an aperitif, a starter, a main a dessert and of course local wine. 

EveningS THE APERITIVO

Aperitif time in Mallorca, as in many other Mediterranean areas can become a true ritual. We will start drinking a good Vermouth and eating a “Banderilla”, a typical appetiser with chilli pepper, olives and anchovies. We will enter the world of local and natural food preservations techniques. After the aperitif we will get to work and start a hands-on cooking workshop to prepare a complete Mallorcan seasonal menu together, including a snack, a starter, a main, a dessert and of course local wine.

Sample Menu for both activities

  • Local cold meats and artisan cheeses with grapes and almonds

  • Mallorcan flatbread with greens and raisins

  • Greixera d’ous, a iconic vegetable casserole with plenty of spring veggies and herbs with eggs, cooked in clay pot (greixonera) 

  • Rubiols a half moon shaped pastry filled with marmelade typical from Easter.

All the ingredients are locally and sustainably sourced. Animal protein is very important to understand traditional Mallorcan Food culture but this workshop can easily be made vegetarian or vegan for private groups. Please advise of any dietary requirements, we will do our best to accommodate the course to your needs.
